Buttered Scones | The Hobbit; An Unexpected Party

Ingredients
  

  • 1 ½ cups self-raising cake flour low protein
  • 1 teaspoon castor sugar
  • ½ teaspoon baking soda (bicarbonate of soda)
  • ½ teaspoon cream of tartar
  • 3 tablespoons cold butter (40g)
  • ¾ cup buttermilk*

Instructions
 

  • Preheat the oven to 200°C | 390°F.
  • Sift flour, sugar, baking soda, and cream of tartar into a bowl.
  • Cut butter into 1cm cubes. Rub it into the flour mixture with your fingertips until it resembles breadcrumbs. (Or use a mixer with a flat beater.)
  • Gradually add buttermilk, mixing until a soft, spongy dough forms. You may not need the full amount.
  • Turn the dough onto a floured surface and gently knead. Roll out to 1 inch thick.
  • Cut into circles and place on a baking tray.
  • Bake for 15–20 minutes until golden and risen.

Notes

To make buttermilk, take one cup of milk and stir in 1 tbsp of white vinegar. Let sit for 5 minutes before using.
