Ingredients

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon chili powder
  • 3 teaspoons brown sugar
  • 1/2 teaspoon sea salt
  • 1 cup raw almonds
  • 1 egg white

Instructions

  • Preheat your oven to 275°F (135°C) for conventional ovens, or 250°F (120°C) for fan-forced ovens.
  • Line a baking tray with parchment paper or lightly oil to prevent sticking.
  • In a small bowl, mix together the ground cumin, cayenne pepper, ground cinnamon, chili powder, brown sugar, and salt.
  • In a separate bowl, lightly whisk the egg white until foamy.
  • Add the almonds to the egg white and stir with a fork until they are evenly coated.
  • Using clean hands, transfer the coated almonds to the spice mixture. Stir with a fork until the almonds are thoroughly coated.
  • Spread the almonds evenly on the prepared baking tray, ensuring they do not overlap.
  • Bake for about 50 minutes, stirring halfway through. Keep a close eye on them if you increase the temperature, as they can burn easily.
