Honingkoeks: A traditional Dutch honey cake

During the time of The Legend of Sleepy Hollow, baking was undergoing a transformation, as new leavening agents began to change the consistency of cakes and cookies.

However taking inspiration from the Dutch origins of the Van Tassels, you’ll find a recipe for Honingkoeks, a blend of cake and bread textures below.

Are these honey cakes actually cakes or cookies?

The distinction between cakes and cookies has evolved over time, particularly with the introduction of leavening agents. In American Cookery (1796), we first see the use of pearlash, a potassium carbonate derived from wood ash. Pearlash allowed for a lighter, more cake-like consistency, distinguishing these baked goods from denser cookies. During the time of The Legend of Sleepy Hollow, the transition of terms was likely still in progress. Today, we achieve this with bicarbonate of soda or baking powder.

This change in density may have contributed to the shift of terms used. In some countries, what were once called cakes—whether tea cakes or sweet cakes—began being referred to as cookies or biscuits. In American Cookery by Amelia Simmons’, cookies (or “cookey” in some cases) were given their own category, but it may have taken time for the term “cakes” to be fully replaced by “cookies” in common usage.

Because of the Dutch influence in Sleepy Hollow, we’re making Honingkoeks (Dutch), a popular breakfast item known for its cake-bread consistency.

Ingredients
  

  • 2 cups self-raisingflour
  • ½ cup brown sugar
  • ½ cup honey
  • 1 cup milk
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice
  • pinch of salt
  • 1 large egg room temperature

Instructions
 

  • Preheat oven to 375F or 190C conventional [175C fan forced].
  • Mix all the ingredients together until combined.
  • Pour into a greased bread pan and bake for 30 minutes.

Ginger cakes

Ingredients
  

  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/2 cup molasses or golden syrup
  • 1 cup boiling water
  • 3 1/2 cups self-raising flour
  • 1 1/2 tsp allspice
  • 1 tsp ginger
  • 2 eggs

Instructions
 

  • Preheat oven to 375F or 190C conventional [175C fan forced].
  • Cream the sugar and butter together, then add the molasses and water.
  • Mix together before adding in the eggs.
  • Finally, mix in the flour and spices.
  • Stir well and pour into a greased bread pan and bake for 30 -40 minutes.

    I made both cakes for a themed dinner party. The flavour was great for both, however, they were very dense! I could have baked them another 5 minutes but they were good anyway.
